饼皮的灵魂来自 “糖清(syrup)” 我们的饼皮有一种别人没有的香味 因为我们不是用现成的糖清。糖清的精髓是要2-3年前煮好，放着给它age，随着时间才会越来越香，颜色才会变美。自制糖清要慢火熬7个小时，好几种材料，独特的秘方，拿捏好糖和水的比例。 The soul of a classic baked skin mooncake comes from the aged golden caramel, which is very rare nowadays. It gives the mooncake a special aroma and nice golden brown sheen that commercialise mooncake couldn’t achieve. The mooncake we're eating today, takes at least 2 years to come to live. Maltose, sugar and other secret ingredients, hand-cooked over the stove under low heat for up to 7 hours to turn into a caramel. It will then take another 2-3 years in an airtight container for its signature golden colour to form, and it's flavour to develop depth. Only then it is finally ready to be made into this classic baked skin that leaves a nice lingering caramel after taste.
