This Penang Nyonya famous dish is cooked with mackerel soup and tamarind is used generously in the soup which gives the sourness in the taste on top of the prawn paste’s sweetness.
A perfect combination of sweet, sour and spicy flavour that will make you come back for more!
Onion, lemongrass, galangal, Vietnamese coriander, torch ginger, turmeric, shrimp paste, tamarind paste, chilli, cooking oil, citric acid, salt and sugar.
To make your own original Penang Asam Laksa:
1. Add 200gm of any mashed fish meat of your choice (Tuna/ Mackerel/ Sardine) into a pot of 700ml boiling water for 5 minutes, be it fresh fish or canned fish but without the sauce.
2. After 5 minutes, just pour in the Asam Laksa Paste and let it simmer for 10 minutes in the low medium heat.
3. Serve the soup in a bowl (200ml) together with blanched laksa noodle (or any noodle of your choice) and add garnishing such as sliced pineapple, onions, cucumber, lettuce, chillies, etc. Best served with 1 teaspoon of shrimp paste (hae ko or 虾膏). Enjoy!
