Kuih Bangkit is a powdery sweet cookies that melts in the mouth. The tapioca flour was pan-fried with pandan leaves until light and fluffy; and the egg and sugar mixture was hand-whipped with a spring beater until light and frothy. Then, the cooked flour and freshly squeezed coconut milk were added to the mix. The mixture is hand-kneaded into a soft dough and shaped.
