Jam Tuhau or it also known as Etlingera coccinea Jam is a very popular ingredient in Sabahan cooking. Tuhau share the same family as Torch ginger/Bunga Kantan (Etlingera elatior). Unlike Bunga Kantan, only the young shoots of Tuhau is eaten.
Tuhau scent is distinctive and unpleasant to some people, who liken it to that of a stink-bug! But despite the scent, Tuhau taste really good with a hint of mild young ginger and lemony flavor. Medicinally it is believed to reduce high blood pressure and is also used to cleanse the blood.
