This home-fermented naturally sweetened organic miso was made from Fragrant Thai AAA rice and Non-GMO Organic Canadian soybean. This paste was fermented up to 1 month to retain its sweetness and contains only 6% salt.
This miso has not gone through any other processing except for aging in glass barrels. It is also unpasteurized and all the micro nutrients from the fermentation is still working its magic in the jar.
In Japan, this miso is referred to as the Kyoto Saikyo Style which is often sweetened naturally to be used in a variety of dishes. The most popular dish is Braised Codfish in Sweet Miso and Sake.
